The wife and I love this cold soup and I make it a lot in the few warm months we have up here in the GWN.

It can be topped with grilled shrimp or smoked sausage to make it more of a meal. I have not tried it yet but I think it would be amazing with smoke roasted roma tomatoes.

Roxy's gazpacho

1 cup diced cucumber
1 cup diced red pepper
1 cup diced green pepper
1 cup diced red onion
1 cup diced celery
1/2 cup minced fresh parsley
1/2 cup chopped green onion
2 28 oz cans plum tomato's chopped with juice
1 bottle of V-8 or Motts Garden Cocktail.
1/4 cup or to taste red wine vinegar
Juice and zest of one lemon
1 tsp fresh crached pepper
1/2 tsp salt
tabasco or other hot sauce to taste.

Combine all ingredients and let rest in the fridge for a few hours before serving.

Seriously, that does sound pretty refreshing....
The wife's collecting all kinds of vegetables to preserve, so may try this one out in light of all that activity....

Cold soups are way cool & something kind of off the beaten path....
My neighbor from years ago used to make a killer cold avacado soup, I've got the recipe buried somewhere ??? Embarassed

Have prepared this since 1971...( Recipe from a Spanish
Restaurant in Lower Manhattan) Many Folk We served it to back then did not care for a cold vegetable soup...

We don't associate with those folk anymore. Shocked Twisted Evil

Thanks Ernie.. Only thing I can suggest is to season with the salt and hot sauce to taste. Other than that.. Enjoy..!
