Here's the deal... I have acquired a number of green/red bell peppers recently, and I have a party where we're supposed to bring sides to. I'm already bringing my version of ABT's, but I've been thinking about concocting some form of grilled dip inside a bell pepper as well. Seems I remember seeing a recipe for something like this in a Pampered Chef book, but haven't been able to locate it again.

Any ideas?

Have you considered smoking them and then chopping them into a dip? You could still serve it in whole peppers... Smile

Chop them into 3/4" wide strips.

On a strip, layer a mixture of shredded sharp cheddar, cream cheese, and finely chopped jalapenos (I like using the sliced ones from a jar for this).

Place another strip on top of it to "sandwich" the cheese in.

Wrap them in bacon, and throw them on the smoker.

Smoke, roast or grill them off and place them in a plastic bag to sweat the skins..

Remove skins from the peppers.

Place in a food precessor with some smoke roasted garlic, and a wee bit of olive oil and pulse.. you dont want to make a puree so leave it some what chunky..

Season with cracked pepper and a bit of salt.

Makes a nice dip or topping for grilled chicken or fish.
