Pickled Japs

1lb. jalapenos, sliced.
4-5 pepper corns per jar.
1 red pepper per jar.
2 garlic cloves per jar.

Brine:
2 1/2 cups water.
2 1/2 cups white vinegar.
3 Tb. salt (I used kosher salt).
3 Tb. sugar.


Poke holes in whole peppers to let the air out.
Pickle for 3-4 weeks min.


Serious psycological disorders could occure.

I know this is an old post, but I like this recipe.

Do you put everything in the jars cold or do you heat anything up (like the vinegar)?

I did a search on pickled peppers and found one post that was saying to get the vinegar to just under boiling before pouring it in the jar.

I have 4 plants that are giving me plenty of jalapeno's and I want to pickle some red and greens together.

I always hot pack peppers, add hot brine to jars, then process in boiling water for 15-20 minutes. Sorry for not clarifying that in the OP. Crazy good stuff especially at new years partys.
