Can't find the really good thread on this, but if you just bunch up the foil around the bottom of the onion it'll get a lot more smoke....

I've smoked em before. No pics and I don't remember which cook it was.
Trim the stalk and roots off, leaving a small flat spot on the onion.
Cut in half. Do not peel, other than to remove the thin flimsy stuff off of it.
Using the tip of a sharp knife, score the flesh about 1/2" deep. Kind of like spokes in a bicycle wheel.
Pour about 1 tsp balsamic vinegar over the top of each half.
Pour about 1 tsp EVOO on after the vinegar.
Put some kosher salt on it.
And smoke away, until tender.
Peel the skin off or just use it as a bowl.
I forgot, make a foil boat for each half. Keep them good juices in where they belong.

I build a foil tray for them, peel and flatten an end so it stands up easy, core a hole on the top side, add some butter and 1 beef bouillon cube per onion. This is my favorite way to smoke them, my kids turn up their nose to all onions except this one Very Happy

charcoal junkie, Cut the top and bottom off the onion and crosscut the top then place it on piece of foil. Place about six cloves of peeled garlic around it. Then drizzle some EVOO on top and sprinkle some rub on top.


Wrap it up tight and place on the cooker, i let it go for about two hours at around 250° then check to see if it is tender.
Here is a pic of them finished.

Thanks for the help fellas. What do u guys do with them? Do u just eat them or use them in a sauce or dip. I was thinking a smoked onion dip would be good. Maybe a smoked onion aioli or gravy of some sort.
