hello hello,
does anyone have a tried and true recipe for chicken sausage???
the copy of flying sausages at my library is out...
im only wanting recipes that you use..
i have recipes from authors knote and reavis....
the knote wurst looks pretty good....

Here's 2 I've made that were really good. Vitually fat free.
5lb mix half boneless, skinless breast and thighs
2Tbl salt
1Tbl nutmeg
1tspmace
1tsp ginger
1tsp onion pwd
1 cup apple 1/8 inch dice
1/2 cup dry white wine
Cut chix into cubes that will fit easily in grinder throat. Coat with spice mixture and refridgerate 15 min. This will allow the salt to cause the meat to 'sweat" which will help lubricate it for the grinding process. Just before stuffing mix in the wine and apple. Grind thru medium plate. Stuff into 35/38mm hog casings. Fry or hot grill.
Another good one:
5lb bnls skls thighs
2.5 lb bnls etc breasts
3.5 Tbl salt
1 1/2Tbl oregano
1 med onion chopped
3 cloves garlic chopped
1 Tbl white pepper
1 roasted red pepper chopped ( I used the ones that come in a jar)
10 sundried tomatos chopped
1Tbl crushed red pepper
1 tbl garlic pwd
1 cup crumbled feta cheese
1 1/2 cup dry white wine.
Follow direction above. |
