Can we call a moratorium on making sure you let us know that your BBQ is better than what is served in the restaurant you are reviewing? It doesn't help us to get an understanding of the quality of the food at the place you are reviewing.
While I have come to understand that the great majority of all BBQ enthusiasts are insufferably narcissisitic about their cooking prowess (justified or not), cooking a single rack of ribs for your kids and cooking 3 cases to be ready throughout the day to keep up with demand are two very different things. Unless you are inviting me in to eat with you at your house (and at a time I will pick without any prior notice to you, I'll just show up with a $20 in hand), please spare me the puffery about how good you, your family and all your friends think your food is. _________________ I likes to eat 'da pig!

Yeah, but I came by yesterday and knocked on your door and no one was there with a hot, fresh rack of ribs, so I can only go on what other people say. The buzz isn't good  _________________ I likes to eat 'da pig!

Of course BBQ joints can't compete with home smoked. When the meat is perfectly done, it's time to eat it now, BBQ joints can't insure a freshly done smoke is ready right when a customer comes in, so the meat is always cooked ahead of time and it never will be as good. That's an unsolvable problem for something that needs to be slow cooked, but gets ruined if over-cooked or required to "rest" for too long. Grilled steaks are whole nuther story. so is a large pot of spaghetti sauce. I've come to the conclusion, good BBQ is a backyard/front porch phenomena. _________________ Brinkmann Verticle Water Smoker
