My schedule got messed up and I had to leave it in there for 2 week. Used 1 tablespoon cure per pound, amd mixed sugar and slat to coat the loin. took it out today it is very firm. Soaked it for 5 hours changing water every hour. Am cooking at 225 right now will bring up to 140*. Will it be ok?

Probably going to be a little salty.

I like to start my smoker at a lower temperature, and take it up 10° every 2 hours or hour and a half at least.

I normally smoke for 8 to 10 hours.

YMMV!

I should have put some vinegar in the water to suck out some of the salt but it came out just fine!
