So I started to caramelize two sweet vidalia onions to add to my mashed potatoes tonight, with a good chunk of creamy goats cheese when I decided to try something else. Pulled a bunch of the end cuts of the bacon I make (I knew I reserved them for something) and started rendering it down to make bacon jam.
- Two onions sliced thin and cooked until just starting to caramalize.
- Rendered about 1.5lbs of bacon until just starting to crisp.
- Drained fat except for a tablespoon worth then added the onions, 2 large cloves of garlic, and cooked for two mins.
- Mixed half a cup of coffee, 1/3 cup packed dark brown sugar, 1/3 cup apple cider vinegar, 1/4 cup maple syrup, 1/2 tsp chili flakes. Added to onion mixture. Salt and pepper.
- Added bacon to this. Bring up to a boil, reduce to low, cook for 1.5-2 hours.
Will post more when done. Here is a teaser of it reducing.

That sounds good.
I think smokin gal has a recipe for this with beef bacon.
Damn me to h3ll i couldnt find the thread that she had posted about making it. Make sure to skim any grease off of the top. _________________ #3 LIAR

Finished product. This is amazing, gave it a few pulses in the food processor after 1.5 hours and it is perfect! I plan to use it on some homemade sourdough bread grilled cheese with 2 year aged cheddar and bacon jam ... I just drooled!
With pork chops and sage, goat cheese and bacon jam mashed potatoes, and some oven roasted asparagus.

What was you yield on that recipe? I'm thinking about including it in this year's Xmas Goodie Box. Trouble is, my wife's family took that passage in Genesis literally and I have 30 boxes to send out each Xmas. |

I didn't jar it yet, was out of lids but I would guess there was enough for about four small jam sized mason jars. I imagine 30 would require 7-8 times the amount, but it would make an amazing gift! |

The way my family is raving about it Im gonna have to do more tomorrow too! It is so worth it, my new favourite condiment. If you make your own bacon it is a great way to use the end cuts of the slabs. |

Right on! Im so glad you liked it, I kind of winged it but have been looking at recipes a few weeks back so Im sure I probably stole some of the ingredients from someone. Without being sure where I will take the credit, haha! |

WOW!!! That looks mighty tasty! Would go really good on a grilled cheese sammie.

I got my mom to send me the Southern Living recipe (she's a subscriber, I'm not):
Bacon Marmalade
Makes 1 1/4 cups
1/2 cup (16 oz.) thick hickory smoked bacon slices--diced
1 cup sorghum syrup
1 1/2 cups cider vinegar
1/2 cup chicken broth
1 bay leaf
Kosher salt & cracked pepper to taste
Cook bacon in a skillet over medium-high heat, stirring often, 4 minutes or until just dark golden brown; drain on paper towels. Wipe skillet clean; return bacon to skillet. Add sorghum; cook, stirring constantly-1 minute. Add vinegar; cook stirring often -8 minutes or until liquid is reduced by half. Add broth and bay leaf; cook 5 minutes or until slightly thickened. Add seasonings. Cool 30 minutes. |
