I know the basic differences between the two-however, could someone explain why I should use fibrous protein lined casings for dry cured salami? I understand they shrink with the meat as it dries but that cant be all...people used hog and/or beef middles for millenia for the same thing before fibrous and collagen casings were around so there has to be some underlying reason, although Im sure you could use either and it would turn out pretty similarly...............thank you

Fibrous are stronger so they can take the extended hang time for dry-aging, if you use natural, you may risk a tear and product hitting the bottom of your cure room unless you net or tie.

Do not try collagen that is not fibrous for hanging, or twisting off links, they do not hold.
