Well it depends on the outside temperature. I just tried smoking some cheese for the first time last week and it was about 80 deg F inside the smokehouse and the weather outside was probably 40 deg.

I made a couple mods a couple months ago when I wanted to cold smoke some bacon.

I added some 3/4" pipe nipples for more ventilation, and made a cold smoke generator that fits in one of the vents.

I smoked the bacon for 10hrs and the temp in the smoker never got above 50 degrees.





Here's where I got the idea for the smoke generator. It works great!

love the cold smokers you guys have done great jobs,i was wondering if anyone has seen a hot smoker made of wood i seen very little info one time . im good with wood not so mutch with metal would love to build one from wood. thanks for the pics looking great.

I was just looking at this thread today. I love these little smokehouses!!!

I'm about ready to build one for a dedicated sausage smoker. I'm going to go electric and am looking for an element to do the job as opposed to the hot plate (mainly cause I can't find one locally). I also want to put a thermostat control on it. I just think I could make a bigger and better one than Bradley for les money.
