MacEggs, your concoctions and ideas with eggs are absolutely asstounding, do you have a Book out that people can purchase?
If so, what is the name of the book and where can I get it? |

No book. Just this thread, dude. I like to share.
As far as the flavours and concoctions ...
I started to get more creative and adventurous as I got older and wiser.
I try to think outside of the box ... and if it helps others, then that makes me a happy boy.

Helping your friends is a wise mans decision, you seem to do that quite often!
I still think you should put your knowledge together in a book and reap the benefits for yourself.
There are others that will steal your knowledge in a second!!! |

Nope.. I think I can pass on that.. I like to eat your eggs but not fast and surely not 3 eggs in under a minute, that is out of my league..
As for those ring of fire eggs.. I will have to pass.. Your last hot eggs nearly killed me.

It's been exactly 4 months since my latest experiment with LCB.
Time to do a taste test.
Here is L.C.B'idness (just LCB).
I gotta say, the flavour was most excellent! My wife liked it too!
Not very much heat, but, just enough to satisfy a non chili-head.
Here is the B-G's Ring o'Fire (LCB plus a few extras).
Oh my ... This was really, really hot! Wife did not try this ... Me jumping around didn't help.
A beverage to enjoy!
I will definitely use the LCB again.
Not too sure if I will add the extras, though. Or, cut back on them some.

Thanks for stopping by the Deli yesterday for lunch and letting me try some of you new batch of eggs..
The LCB's are real tasty.
The B-G's Ring o'Fire was something else. First bite was gave the taste of the peppers and a wee bit of heat and it just kept coming on and on.. Not sure I would try another but it was an experience..

I had some late night / early morning episodes with that one egg you saw me eat.

That sammich you built me was fantastic!

I've discovered some bacon salt at the local farm supply. I think I'm going to try some "Bacon 'N Eggs". My mustard and jalapeno recipes have proven the most popular around my house. If those LCB eggs are as spicy as they sound, that may be my very next experiment! _________________ The rational mind is dangerous. |

The eggs with just the LCB had very nice flavour. Not too hot at all.

Hey,, I have posted before, I use a smoke a tube,with treager pellets, last bunch of eggs was smoked with Alder for bout 6 hrs. then pickled in smoked vinegar, with a honey chipotle sause added. Another bunch was smoked,,bbq,,pickled eggs, I do this in a offset smoker, Its winter here,, inside temp of the smoker is about the same as outside. watchout so you don't freeze your eggs or CHEESE?? thanks |

Very interesting. Smoked vinegar, eh? Another thing I need to try.
I have only smoked eggs once.
Turned out pretty good, but, haven't tried it since.

No, I have not. I haven't really been too motivated lately.
This winter has been quite cold, and steady amounts of snow.

I got my hands on some Double-Strength vinegar (10% acid) last fall at a market.
Had to give it a go.
I cooked up 5 dozen large sized eggs.
Not all the peels went well, but I persevered as usual.
The not-so-good peels got plain brine, and better ones got the Steak N'eggs treatment.
I went with 2L vinegar, 1L water, ¾ cup Kosher salt, 2 tbls sugar in the brine.
The S'n'E jars got 1½ tbls of steak spice. Filled each jar with 8 eggs.
I prefer to fill so that there is about a half inch space at the top of the jar.
This time I had just enough to cover. Will make a little more next time.
I am curious what kind of vinegar bite these will have when taste-test time comes.

I like to use a Malt vinegar for my pickled onions, the darker color and the richer taste works well.
Not seen 10% around here, they have the 7.5%, 5% and 3.5% but not the 10! _________________ Here's a change Robert.
