Did a little experimenting and playing around today. These were stuffed with my mother in laws recipe for cornbread dressing. The sage and herbs in this really set the flavor of the pork off.

I brined the chops for an hour or so and then butterflied and stuffed. Added a little coarse salt and fresh ground black pepper then onto the grill for a quick sear then off to the side to finish. These were outstanding.

No time for a plate up as my wife needed to leave but here goes...

Leftover dressing served with some homemade blackberry jam as I forgot the cranberry sauce.

OH YEAH! That looks outstanding. Cornbread dressing is one of my favorite side dishes and I can't believe I've never stuffed a chop with it Embarassed . I made pork chops last night and the thought of that flavor combo has got me to drooling Laughing . NICE job!
