I have some Canadian Bacon that has been a brine cure for 5 days. I was planning to smoke it tomorrow but it will be the weekend before I can get to it. What should I do with it till then. Drain and place in cold water in the fridge, freeze, let it ride in the brine??

8fisherman, if it has cured in the brine long enough, I would take it out of the brine and leave it uncovered in the fridge until you can smoke it.
I'm not too familiar with wet curing, hopefully someone with more experience can help you out.

Thanks. I will do that. This recipe says to rinse and soak before smoking so i will go ahead and do that then let it sit.
Just got a call form a buddy that traps for a living. He had 11 wild hogs in the back of his truck and wanted to how many were mine. Looks like most of my free time is taken now with more urgent pursuits. LOL. Oh well, certainly not going to turn down 4 free pigs when he is going to field dress them and hang them in his cooler till I can get there. |

pull it out of the brine, rinse it, wrap it, and let it be until you have time to hit it with smoke.
Curing is a huge preservative, so a few days out of the cure and sitting isn't gonna cause any problems.
You did use cure #1, right?
If an actual proper curing formula was not used, disregard my suggestion. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

Yes I followed a curing formula and yes it was #1 that was used. I don't remember the recipe off hand but it is written down in my note book along with notes about the curing process. |
