I smoked a brisket with the Dr Pepper recipe that was very good. Baby back ribs were good but not great. Also smoked a couple of butts form a feral pig that I dressed last weekend. The butts were ok also but not great. The cabbage rolls stole the show!
Just getting started.
1 fresh cabbage head.
1 lb sausage. (I used fresh homemade Andouille that had not been smoked.)
1 cup dry rice
3 sweet peppers (size of an egg)
3 hot bell peppers (size of an egg)
1 hot cowhorn pepper (These are what the farmers market had. Adjust the peppers to taste. This turned out fairly hot but with great flavor.)
1 Vidalia onion
Salt and pepper to taste
Cook 1 cup dry rice as directed. Remove the big leaves form the cabbage and save to make the rolls. Shred the remaining cabbage. Cook sausage till brown. Remove sausage and add all chopped veggies to the drippings. Sautee for a couple of min till fragrant then add the cabbage and cook till wilted. Add a little EVOO if more oil is needed. Add the rice and sausage then stuff into the reserved leaves. Tie with cotton string and place in a foil pan. Place in the smoker or on the BBQ for as long as you like to pick up a nice smoky flavor.
Enjoy. We sure did!!

Forgot one ingredient... I added one diced green tomato also. |
