Ok, I know it cooks bread and pizza's So how about tri-tip?
First I built a hot fire and place some fire bricks on the sides of the fire.
Next place my cooking grate on the bricks to preheat.
Place the tri-tip on to sear and start moving the coals for offset cooking.
Coals all moved and tri-tiped flipped.
Temp probe in place. It took a while but the heat burned out my probe.

Modified charcoal lighter made a nice air flow director/heat door and it preheats my next stick nicely!
Pulled and resting!
Done a little more than I wanted but still not bad!
With a smaller fire to keep the temps down, I think just about any offset cooking could be attempted in this oven! _________________ Homemade offset smoker 24"x48"

Kevin, although I built the oven for pizza and bread, I'm finding it is a very versatile oven. I'm sure I will be playing with it for some time to come. Eventually I think I will and on to the cover structure and make an outdoor kitchen. I can see having this oven working along side of my smoker and grill for large gatherings of family and friends! _________________ Homemade offset smoker 24"x48"
