When building a griddle what would be the best burner to use high pressure or low perssure?

I would think low pressure. My experience with griddle is limited to the CAMP CHEF and it uses low pressure. I have not needed to turn the knobs past med for cooking and usually stay on low.
If you are gonna use a much thicker material for the griddle high pressure might be best.

I hope to follow this...MY next project is a Flat top cooker made from 1/4 flat steel so im also curious what might be the best burner
