So, I'm going to smoke a few butts to pull and store away for carnitas, etc. Anyone have thoughts on an appropriate rub? Lots of paprika, garlic, chili powder, onion... ???

I would also add red pepper flakes, ground coriander & definitely cumin!
I like to look at lot of recipes & get some ideas. Then make

Never heard of PP for Carnitas - IMO that's not how they're made (big chunks of pork shoulder, marinated in coca-cola, cooked down in water and lard is how I do mine). That sounds like tacos you're trying to make. Go with something smokey. Like Cumin, Annatto, Paprika, ground Ancho. ^^ agree. carnitas is the name of a dish not an adjective.... but pulled pork on a good corn tortilla is great! |
