I am having a bit of trouble locating quality Pork back fat, but I can get Pork kidney fat, normally used to make leaf lard. Has anybody tried this kind of fat in sausages? Do you think that it will have the right texture? Or is it too hard?

Try the butchers in Montello Meat Market, 435 Ionia Ave SW, I'll bet they have what you want / need!
