I'm thinking about making some snack sticks. I'm curious to know, after the the initial 2 or 3 hours of smoke, how long do they take to get to an internal temp of 160*f when you up the smoker temp to finish them? When I've smoked bacon it's taken up to 5 hours to finish it to it's final internal temp.

As soon as you raise the temp to 225 or more the fat will start to render and they will loose flavor. Smoking at 170 the whole time works well. Should take about 4 hrs.

your other option is to heat some water at 200 degrees and finish them in that for about ten mins. Surprisingly it doesnt take away the smoke flavor ,is quick & leaves the skins with a better finish & texture. Learned this from a buddy that makes lots of sticks.

Jim, remember to shower the stix with cold water to cool them. This plumps them up, and keeps them from wrinkling up.
