What a great tasting sausage...nice to get away from pork and beef .
This recipe is for 1 kilo of sausage...or 2.2 pounds
I doubled up on it and made a 4.5 pound batch.
If I had known it was going to taste so good I would have made 10 pounds.

Any ways I will let the pics do the talking. Laughing



I did not have back fat so I used real fatty dry cured bacon
and a mix of chicken thighs and breast meat.







I ground everything through a 6mm plate.







Everything all ground and mixed ready for the stuffer.









All stuffed and linked....now i need to throw a few links
on the BGE for dinner to check them out.







Boy do these smell great when they start cooking
I really like curry dishes.




They were fantastic and will make them again....
lots of green on the plate......have to work of a few pounds every winter when im home.

Those look great! I saw them in Marianski's book and have wanted to make them for ages. I think next weekend if I can get one day off will be dedicated towards sausage making.

I was not sure what to expect....but they tasted great.
I used 2/3rd chicken breast meat and 1/3rd chicken thigh meat so
i had a mix of white and dark meat.

I usually am not big on poultry sausage, texture, etc. but with curry, & peppers that is a must try. Thanks...
