So I've been busy building cigar box guitars lately, and haven't done much in the way of BBQ or sausage making, but after some inspiration from recent posts here I figured it was time to get back on the the horse and make some damn sausage Very Happy

I decided to try the chicken curry sausage and brat recipes posted by CB and Cat797. Thanks for posting the recipes guys.

I actually did all of this a couple weeks ago. Just getting around to posting now Rolling Eyes

I had some chicken left over, so I decided to use it for some breakfast sausage

We were having some family over for dinner, so threw a 9 lb butt on the smoker in the morning


Butt ready to come off


While the pork was resting, I put some sausage on




Ready to eat


I didn't get any plated pics, but everything turned out great

Iowa Farm Breakfast Sausage

3 pounds pork butt (I used chicken thighs)
1/4 C finely chopped fresh parsley
1/4 C finely chopped onion
1 Tb. Kosher salt
2 tsp. Ground sage
1 tsp. dried thyme
1 tsp. dried basil
1 tsp red pepper flakes
1 tsp. coarse ground black pepper
1 tsp. ground ginger
1/2 tsp. minced garlic
1/4 C waster

Great job on the links....you can really see the yellow from the
curry when its cooking....how did you like it?

The curry sausages were awesome with a little smoke on em. Very Happy definitely making a bigger batch next time.

Gonna have to try em grilled next.

The breakfast sausage is good. Its doesn't have a Jimmy Dean kind of flavor that you might find at most places, but it's one I've been making for a while now, both with pork and chicken, and we really like it. My wife likes the chicken version better, so chicken it is Very Happy
