I have some smoked cheese sitting in the fridge (been there for about a week). If I bag it up and put it in the freezer, about how long will it stay good? I'm new to the cheese smoking and really like it, but I would like to have it during the summer months as well. I appreciate any help from you folks.

If you vacuum seal it you should be fine.

I just vac seal and put in the back ipf the fridge. I find that the longer it sits,the better it tastes. I also find that freezing cheese sometimes changes the texture of some cheeses.

If you vacuum seal it, you can put it in the freezer. It will last there for some time. How long, I don't know. None of my cheese made past a year.

Just vac seal it - I never put mine in freezer as long as it has a good vac seal you are good to go, I have some in fridge for two yrs now. I know one person has some aged for 12yrs never in freezer. Good luck
