Can we slide in an order of Jerky , Am I in the right place ? My dad used to make alot of jerky but this will be my first round . What cut of meat should be used ,top round or maybe a brisket , seems like dad used like top round if memory serves me right He would cut down into the meat 3/8 of an inch turn the knife sideways and cut into a spiral fashion making strips . I think he then soaked/marinated with flavoring then I'm sure a little sprinkle of something ( Cracked Pepper or BBQ Rub ) let sit on drying rack and then into the smoker .
So I generally get the process BUT would like to know the best way . I know Alton Brown has made it with A/C Filters and fans but I Think I would like a more traditional way . Can anybody help with maybe a earlier post or some good advice . I would greatly appreciate the help . Spices ? and then the cook times . I have a vertical reverse flow charcoal smoker for the cooking .
