Sometimes I wrap sometimes I don't, depends on how the smokers running and how much bark I want.
If your that jealous I gladly share the work load with ya. Theres plenty to go around with that much Q on the menu |

Well that's 400 lb prior to brisket trim ( these were pretty lean ) and cooking loss so adjust accordingly. They had some left over and auctioned a couple bags of pork off and saved the rest for a covered dish dinner on Suunday evening after religious services. But yeah this bunch can eat. They never leave much in the way of leftovers |

I didn't have a cook session this weekend, but instead cooked a 15 lb. brisket & two 10 lb. pork butts for National Night Out last week (about 30 people in our neighborhood gathering).
You've got a lot of time & work invested in your cook session and the results show the investment! _________________ Let's hope SoEzzy can ditch his heavy hand on photos in 2016!
