Hello

This question mainly applies to anyone here who is in Canada. I called the NS department of Agri. today as they provide the permits to vend foods at roadsides, cater events, etc. and I have an issue.

Seems that they will not allow me to cook raw meat unless I have a fully enclosed trailer. Any Canadians here cater or vendor BQQ?

If so how did you get the permits required in the province you are in?

I'm not in Canada, but that's the way it is here also. For catering or vending, the smoker has to be contained in an enclosed area. If it's on a trailer it must open to the inside, or the porch area must be screened in. That's what makes it hard to use a commissary here, you can't just park the smoker outside an approved kitchen and go to work. Sad

Dont know about the permits, but here is a trailer I designed a while back built on a 16 ft. trailer base. The end folds out (or not) and you have enough room to work and meet food code.
