Hey Ringers
Been quiet on posting lately but figured I would show off the holiday Ham and Lamb cook.

Made a cheater ham, basically just reheating, rubbing and saucing. First time doing this so didn't add any wood. Was about 6 pounds and took 4 hours at 225 to bring up to temp. Panned it along the way as it started to really separate!



Finished and resting - def have to toss that first piece or you would need a gallon of water.

Fun to smoke but I wouldn't rush to do another one.

Now onto the lamb, this was a treat. Did a boneless leg which was very fatty in the middle, killer on the ends. Picked up a little trick called a board sauce. Basically fresh herbs, olive oil and garlic premixed then laid out to be heater by the resting meat.



finished product - temps were all over with the fat so it was more medium than I like but great smoke flavor.
