Alright Ringers (the few and the proud), here is the weekend's smoke. Restaurant Depot has been so odd around here lately with Briskets. This was an Angus Choice that looked just perfect in the package - but she was a oddball to say the least! Trimmed up to around 12.5#
Finally put the knife down and just rubbed it up. Killer Hogs AP first, then my homemade beef rub next, then finished with a dash of Kosmos Hot Dirty Bird for bite.
The goal for this smoke was to cook lower than my normal and try for that Texas Black Bark. Pretty excited that I achieve my goals here. Smoked for 14.5 hours with butcher paper wrap at 185 degrees in the point.
Was able to slice nice and thick with all the fat broken way down.
Some ends and some strips
JUICY
Oh yeah and I been in love with these turkey breasts. Smoke for 4 hours then pan in butter. Rubbed with DIzzy Pigs Mad Max Turkey and Butcher Honey rub. Slice up on the deli wheel after they cool for amazing sandwiches all week long!
Next weekend I got a SNF Wagyu Black Label brisket coming, a farm raise pork butt, ribs and more turkey on deck! _________________ "The Moon ain't romantic. It's intimaditing as Hell" - Tom Waits (maybe he was up at 3am to BBQ too!) |
