the recipe I have for a sausage calls for 5 rounded tsp of Morton's Tender quick salt . Does anyone know of an alternative for this ? The sodium nitrite & nitrate causes a severe allergic reaction for my brother-in-law, his doctor told him to stay away from anything that has those ingredients in it . I was thinking of just increasing the salt some but not sure how much to increase it by . I'm making a summer sausage from some of my elk meat. |

Figure 1 Tbl salt and 1 tsp sugar for every 2 lbs of meat. Smoke at 225 or above and keep refridgerated when done. |
