The only thing I can suggest is to cut it into bite size medallions and wrap them with bacon and cook over direct flame, just watch so the bacon doesnt lite on fire... Twisted Evil

I used to raise ostrich, I know what NOT to do.Smile

Very lean meat, add some fat if you can. DO NOT over cook. Over cooked ostrich is tougher than 10ply tires. Cook to med rare at most, but it all depends on how you prep and cook. It also could use some xtra flavor, IMHO. great for the heart though.
