Wanting to make some buks sausage and save in in meat bags. Was thinking something like the Jimmy Deam meat tubes. Is that what the "fresh meat bags" sausage making supply places sell are for? Do you just fill them with a stuffer, and not worry about the air space? Or, how do I do it?

Made some Italian Sausage this weekend, and would like to do a bulk batch.

Yes, those are the bags. If you have a dedicated stuffer, like the piston/cylinder type you can stuff with that and have no air pockets. You can also just spoon the meat into the bag and continually squeeze the air out. If you plan to do this often you may want to get some hog rings and hog ring pliers.

Thanks! Do I just use the biggest tube I have for the stuffer and let it expand as it hits the back of the meat bag?

Yes. Just grasp the tube tightly near the opening to build up pressure in the bag and force the air out.
