Well, I recently purchased a GOSM wide body smoker, my first one.... And i decided to do some baby backs and a chicken. THe chicken came out very good, it was extremely juicy and had lots of flavor. Unfortunately the Ribs where a different story. I used a rub i got at the grocery store, rub it in and let them sit in the frig for an hour. I started the smoker up got some good smoke going and threw them in for three hours. After that I took them out foiled them up and threw them in for another two. Then unfoiled them and took out the wood chip box. THe ribs where tough and had too much smoke flavor to them.

Although, there is alot of great advice here too!!

Try using wood chunks instead of chips. When you say "Good Smoke" I hope you mean thin and wispy (can put your nose over the exhaust without crying) smoke. The heavy white smoke is not what you want (Harsh taste).

I just use a pie pan and let the chunks burn down. (1-3 chunks every few hours)



For the ribs, did you add any liquid when you foiled? Otherwise, you might have just gotten a bad batch. You'll just need to practice more!!

This has got to be my all time favorite photo…………

Left side = BAD (too much smoke)
Right side = GOOD (just the right amount)

Keep in mind that when someone says "Too much smoke" they normally mean improperly smoked.
