Does injecting a pork butt with a little apple juice help.

I thought I read somewhere that injecting butts with apple juice helps make them more tender,or is that a crock of CR@P! Does it do anything or not,Im doing 2 butts tomorrow seeing as how im not working this saturday,maybe i'll do one with and one without, and compare...any input will be helpfull.

This is my injection recipe:

Pork Injection:

* 1 cup apple juice or cider
* 1/4 cup cider vinegar
* 1/4 cup water
* 2 tablespoons Worcestershire sauce
* 1 1/2 teaspoons pork rub (use the same rub as on your meat)
* 2 tablespoons corn syrup

Dosen't do a bit of good unless you mix with Jack Daniels. Very Happy

I reduce my juice juice on the stove and cool, jack or capn useally find their way in also.

I'm a balsalmic vinegar junkie...mix 1/4 to 3/4 apple juice and a few dashes of worchestershire. Save the jack for the game.

I don't inject or marinate and haven't ever had a problem with tenderness. The only reason I see to inject anything into a porkbutt is to add flavor. And I don't see it adding alot of flavor injecting just plain apple juice.

I got them in the smoker as we speak,im using the recipe shmelty posted.Im just experimenting with flavor,I never inject butts,but im trying something different.

Well shmeltys recipe did add a little flavour,now i have lots of pork sammie's for football tomorrow,the boys should be happy.

I use to inject w/ apple juice. I once ran out and decided to try it w/ out apple juice, thinking my butt wont be as good as it usually was. Well..I couldnt tell one bit of difference. I guess I was making a mess for nothing. Now just a lil mustard and rub.

I inject a mix of EVOO, Jack, a couple squirts of garlic juice, a splash of cider vinegar, and a splash of soy. Can't really say I taste anything beyond some faint JD, but the meat is always tender and moist...

I would say that if you cant taste your injection then you might not be using enough. I inject pretty much all my pork and you can certianly tell a difference..

I guess I'm always a little worried about being too heavy-handed with the flavors. What do you use, and what are your thoughts on the EVOO?

I use a variation of the Chris Lilly injection. It doesnt call for EVOO...it is basically sweet and salty water.

Dont use a flavor you dont like and you wont have to worry about being heavy handed. I make 1 batch of the Lilly style injection for each butt I want to cook. I always have some left over and i inject twice during cooking. I generally inject till the meat plumps up a little and the injection is running out.

I will normally inject it once more when I wrap in foil. If I dont wrap it I dont inject it. I figure when I wrap I need some extra liquid in the foil so why not inject that extra liquid into the meat.

With injecting I am not looking for a ton of flavor, but I do want a little bit.
