That's right, I am NOT perfect by ANY streach of the imagination.... I know, I am shocked too Laughing Shocked Laughing

I put 3 racks of St Louis cut ribs on my FEC-100 yesterday about 1:30. Had it set for 274 degrees using Apple pellets..

Well, one thing led to another and time just got away from me and I FORGOT about the ribs being on the smoker...Another shock Shocked Shocked

When I FINALLY did remember, it was 6:30 so I went RUNNING out to the smoker to find my ribs....well let's just say I wouldn't eat 'em. I brought them into the house and fixed some ranch beans (canned) to go with them and wound up eating ONE rib (and all of the beans) out of the 3 racks....rest went into trash. Embarassed Embarassed :

I am going to cook another 3 racks of ribs today though (still have to satisfy that rib hunger I am having). But THIS time I will set a timer so I will remember to go check the darn things Embarassed Embarassed Mad

Goes to show you that even us that are supposed to know what we are doing each and ever time, still make mistakes.

I would feel better if I had got drunk while waiting for the ribs and passed out...but that was not the case.. Rolling Eyes

You must have the cook time and hold feature on your FEC 100.

If you are going to forget it then set it.

Wow... talk about "set it and forget it"...

That makes us amateurs feel better... I recently went out to check the stick burner and all the sticks had burned up. Not much cooking gets done at 80 degrees. Sad

OK, results of today's cook......

Last night was St Louis cut ribs cooked @275 for SIX (6) hours....tooo crispy for MY likeing.

Tonight, I cooked full spares @250 for a total of 4-1/2 hours (checking every 30 min after first 3 hrs) .

The results of tonights cook were AWESOME ribs...I ate WAY too many and can't wait to dig into them again tomorow Wink Wink

I guess I won't GIVE the FEC away after all....maybe last nights bad cook WAS my fault after all Shocked Shocked Shocked Laughing

Yea, I guess I could of ground them up and made "Marv's Marvlus CAMP coffee". That stuff is pretty dark and thick too...Cowboy camp coffee
