Just think of it as cooking for 40 people, only 1,000 times larger.
Food is food, your just doing way larger amounts of it.
With the size of this event, even if your cost's run wildly out of control nearing a 75% total cost. your still making $10,000 for a few days work and a few months of planning.
You know how to cook, you just need to get the logistics down and hope nothing out of your direct control goes awry. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

S&S, like my post earlier, when it's all said and done I believe your total net will be right around 33%.
The equipment, refrigerated trucks, and the staff required for this event will make a big difference over say a party for 600-1,000.
I have one tomorrow for 650. The first shift of 600 will all be fed within a 30 minute window (8 serving lines can feed 75 quests in 1/2 hour).
I will make a nice paycheck for the day, but not near 50% profit.
When you get all of the prices added up (including ancillary expenses, not just the food) please post and let us know. I would also be curious as to what your labor figures are, and how many helpers you intend to have.

Now I've gone and done it. Just booked another company picnic for September. Funny - I have the big gig the first week, will spend the next week out of town for my real job, then will do the company picnic the very next week. I'm going to need a twin! |

Ditto.
Many of us were excited about this 4k catering for S&S in September (this month).
In fact I think he solicited expertise/advice from established caterers from this forum, and he had intent of recruiting help from forum members that were logistically close enough to help with this event, like Adolpho….best I remember.
Hopefully S&S will respond after he completes this gig so that we may learn the pluses, pitfalls etc. |

I never heard from him, but then again, I've been busy as a bee. So much gigging (music), getting school going and catering just a tad. This past weekend I did do 15 briskets only. I know some of you guys frown on that, but it was decent money. _________________ "Tag line? We don't need no stinkin' tag line!"

I didn't re-read the entire threrad, but this was discussed with S&S (because he bagged on a client previously for this reason) and he told us that he was locked in to have the time off no matter what. (yupp, 1st page, top third)
Now with a Gov't job, we all know what happens when Uncle Sam say's jump!  _________________ BBQMAN
