I don't "frown" on meat only, just meat only when it involves say one or two pork butts. If you are not cooking anything else, hardly profitable.
Now 15 briskets is a different story, so good on you for making some extra scratch and getting to fire up the cooker!

Sorry to hear that as well!
You mentioned earlier you had a "verbal agreement" and that the fellow you were working with had become more friendly due to "mutual friends".
Did you ever get a signed contract and a reservation/booking fee?
If so, how long ago was it that they backed out, and did they want their money back?

I know that marv would prob agree with me on this deal. i would suggest trying to find some ole hickorys or southern prides to help on this deal. IF it was not a 10 hour drive for me I would be happy to bring my 30' mobile kitchen trailer to help. I can cook 30 briskets at once easily. I also would have to agree in using flats. I have done 2000 people a couple of times and my food supplier us foods. has dropped a refrigrated trailer at the site for a small fee. _________________ Cody's Construction Crew

Not this time. But then again, I do put two per foil pan and cover when I deliver, so I guess it has some foil time involved.
S&S sorry to hear about the cancellation.
We're preparing for some major traffic here in central Texas. HS Football games have been moved to tonight and our school district is having early release tomorrow. Should be interesting to see what ole' IKE does to the Texas coast. _________________ "Tag line? We don't need no stinkin' tag line!"
