I have been asked to cook for a company picnic. 40 people (all grown men), they want Brisket, Ribs, Chicken; Baked Beans, Slaw, Potato Salad and I am to provide utensils, plates, napkins, and cups. They are providing desserts and drinks and it will be buffet style.

I have searched through pages of posts and am also using SoEzzy's catering spreadsheet but I guess I just need some reassurance.

I am estimating the following for meat: 3 briskets (packers), 10 slabs of spares, 20 thighs, 20 legs.

I have the sides figured so I am good on that.

I am looking at $14/person for this. Restaurants in the area charge $10/person for two meats, two sides, a dessert such as a cookie, and drinks.

What do you guys think about these prices? Thanks!

I fed 100 oil workers. I made 3 briskets and a chicken quarter for each. Had a few leftovers but not much. Those guys ate a LOT. I think you will be over by one on the brisket. That is if they are the 13-15lb size.

The rest sound right. Price wise here would be a little low but might work in your area.

I catered one today for 30 (my dr's office group). They had brisket, chicken & ribs with ceasar salad, green beans & cheese garlic bread $18.95 (plus gartuity) Wink .

I used.....1 brisket (11 lb)
5 chickens (cut 8/1)
4 slabs of ribs (St Louis)...the other 2 from the package was our dinner tonight Wink

We had some of everything (mostly chicken) left over.

A three meat meal for that sized group would be the same charge as Marv's for me as well.

About the same price here also. Probably closer to $20pp.

Resturaunts don't come to your house and cook it onsite for you either. I would definatly go up, But depends on your area I guess.
