First, let's recognize that everyone has a regional bias. Nothing wrong with that, but it is only a bias. Try to recognize that you have one and approach this with a clear mind.

Now that you've all been cooking both for a while (I hope), which do you personally prefer and why? Have any of you had your minds changed and are honest enough to admit it?

I love pork, but I have to say, I think brisket may have inched ahead on my favorites list. I like the texture and the neat appearance of slices of brisket. I also may have been influenced by my wife, who it turns out greatly prefers beef.

Just to preemt those of you with vile minds my wife also like getting "porked" but she prefers it when I "give her the beef"

At one point is was pork and only pork (ribs) but I have switched and now it is DA BEEF BRISKET. I just love the flavor from my brisket now. It took some time to learn to do it right but I still have a long ways to go.

Are we talking in BBQ terms? As in low and slow with lesser quality cuts?


If that's the case then its PORK PORK PORK!

Dude, that is some nasty stuff man...We smoked a rib eye yesterday. Since there was so much going on I forgot about it and left it on a bit too long and it was BARELY past medium but it was still AWESOME! I usually eat mine medium rare but "pittsburgh"- no way

Definitely pork. Ribs, loin, shoulder, its all good. On the grill I prefer beef, but when I'm doing some real Q, I have to "pig" out. Ok, that was a terrible pun.

Is this favorite to cook, or to eat?
I like brisket to eat over pork, but cooking pork is a lot easier and more forgiving.

If you, like me, had no idea what they were talking about with a "Pittsburgh steak", here's a little explanation I found:

When lunchtime came, they would slap the piece of steak against a slab of hot metal in the mill to sear a blackened exterior around a red, rare core - a cooking style now known as "Pittsburgh Rare." Even the area bars got into the act, serving up Pittsburgh Rare steak, followed by a "boiler maker," or shot of whiskey and a bottle of beer.

I guess I've never had good brisket flat because it can't compare with pork... ribs or pulled.

Pork -- seems to be made for BBQ. Now don't get me wrong, I like brisket too, but if I had to make a choice, it would be pork.
