I would treat it like a goat. Similar body fat percentage, etc. Maybe just a simple salt, pepper, garlic rub. Possibly layer it with bacon or lard to keep it moist while cooking. _________________ "The difference between stupidity and genius is that genius has its limits" - Albert Einstein |

I hate a bunch of it in Mexico while visiting there as a kid. I do remember it was grilled and good. |

I had raw horse sashimi when I was stationed in Japan. It tasted just like...very rare beef, but a very slight gamey flavor.(chicken!!! just kidding) They dip it in a garlic soy sauce dip.
It's actually really good!
Another way I had it was ground up like burger and cooked with soy, brown cane sugar and rice wine. Served as a side with Japanese rice. Amazingly good!!! My ex wife's mother made this for me. As much as I DON'T miss my ex wife, I miss her mothers cooking! I learned a lot from that lady... |

When I lived in Japan, I did not see many horses. Are you sure it wasn't the short, brown, four legged type that bark _________________ https://www.linkedin.com/in/michaeloberry |

We were on a tour bus on the Big Island in Hawaii and there were a lot of wild Burros there, the bus driver was a large fellow and he claimed they were Hawaii turkeys, he said that's because we have large families here. Sounded good to me , but never tried it. |

I've eaten horse and dog but not donkey, I liked horse, especially the steaks, they are similar to beef, but have less fat and a great grilled quickly over a high heat, and I've had them as burgers too, it's quite a sweet meat.
Dog I didn't know until after the meal, but that too was pleasant enough, but I'd prefer to keep them on all fours, instead of in my belly. _________________ Here's a change Robert.
