I'm curious if many folks are using these vacuum sealers.
I use ziplock bags for frozen items and marinades and just suck the air out. Am I missing much benefit? |

I use Foodsaver bags for most all of our BBQ uses if they're going into the freezer, simply because I am so happy with reheating by way of the old faithful "Boilin' Bag" method. When we cook we typically fill up DH Robert's homemade Stumps clone (30 sq' of cooking space), so I'm out for the quickest and most efficient method of packaging.
If I'm doing butts, I'll pull and add some extra rub and whatever liquid seasoning I would add if I was serving, dump it into a bag, and seal it. When ready to serve, just drop the still-sealed bag into slowly simmering pot of water, and it's hot in under 40 minutes. Works for ribs, briskets, pulled/chopped meats, most anything. I frequently spatchcock four or five chickens and seal 1/2 chicken to a bag. I can take it straight from the freezer into the simmering water, and it's thawed and hot by the time I get my sides done, with no drying out and no decrease of quality. I keep 1-pound packets of heat-n-eat pulled pork in the freezer for gifts, quick dinners, neighbors, and other such uses.
I also like the vac bags for mass-cooling purposes. Since it isn't a good idea to take meat straight into the refrigerator or freezer from the cooker, I will process the hot meat, seal it, and throw the sealed package into an ice chest containing an ice/water slurry. That chills the meat down to a safe temp MUCH faster than just placing it in the fridge or freezer.
Other than BBQ purposes, I use the sealer more for glass canning jars - rubs, spices, pasta, bread crumbs, all kinds of things, because the bags can get rather expensive. If we're cooking for someone else, I usually factor in 50 cents per bag.

Keri - thanks for the link. I just bought a new one for Kim for Christmas since our last one died (after about 5 years of usage). I got one at WalMart for $74, but I'm tempted to jump on this offer just to have an extra one to keep in the trailer.

The biggest complaint I have with these units is the cost of the replacement rolls. Does anyone know of a site that sell replacement rolls cheaper than store prices?? _________________ Gary

I would recommend staying with the Foodsaver brand rolls -- we've tried the cheaper brands and they just don't remain sealed very well. _________________ Steve

Plus the foodsaver bags can even go through the dishwasher and be re-used. You'd be amazed how much use you can get out of vaccing things in glass canning jars for storage, even in the freezer, and those you can reuse indefinitely.

I to have used the cheaper bags ya get what ya pay for they wouldn,t

I was jones'n for some pulled pork on Monday, so I just plopped a bag in some hot water and made me and the family happy. Thanks for the heads up on the Food Saver Keri C. I have been wanting one for a long time but been to cheap to get it, but at that price i couldn`t pass it up. Now i can donate the Blacken Decker food sealer to someone in need. It works but just not as well as the Food Saver brand.

I almost always cut my bags a little long so that I can keep re-using them. You only lose an inch or so each time - makes the brand name bag rolls much cheaper in the long run. And, that 50 cent bag is way cheaper than having to toss out food with freezer burn.

If you're talking about the Foodsaver site I'm pretty sure they don't accept Paypal. If a site accepts Paypal nowadays it's all over the site advertising it.
Otherwise I would have used Paypal checkout. I dig not having to type my info in.  |
