I am kindof sortof new to q'n. What is the purpose of brining a chicken or turkey?

This

I read the link and today made a brine for the first time, real simple with salt, sugar and vegetable stock. Soaked a half dozen thighs in the brine for about 5 hours and tossed it on the grill.

Turned out better than I could have hoped, tender and juicy like no other. I think next time I am going to be adding in some apple cider though.

Some maple syrup is good in a brine, too.
