Im going to build a UDS in the next two weeks
Located a guy who sells drums.

For the First cook I want to do a Turkey
Im thinking 15#

Has anyone done two in a UDS at the same time.
Does it change the cooking time as long as you
keep the temp constant.

I was thinking 250-275 deg
or would you drop down to 250

Nope, not in a UDS, I haven't.
I don't think I could get 2 birds in mine without touching the walls or each other. I use the beer can method and stand them up so double racks are out of the question.
I cook mine at 300-325, makes for a better skin.
By cooking two birds at once, you will extend your time a little bit but not much. You're still cooking a 15# bird, just two of them. Use a meat thermometer in the meaty portion of the thigh and when it registers 170 pull and foil or tent the bird. Let it rest for about 30 minutes, carve and dig in.

170 in the thigh, and the breast will be WAY overdone.

I test in the thickest part of the breast and pull at 160 (never, ever let it get above 165). Carryover will bring it up to 170+ all on it's own.

Don't overcook your turkey...your guests will be super impressed by a juicy bird (especially when they are used to dry, overcooked turkey).
