Heres a recipe for a good Potatoe salad that has won the Va. State fair for the last couple years. This is for Mike Lawry:
2 lb. New Potatoes(not the baking ones)
1 sm. onion peeled & grated
1/4 cup vegetable oil
1 1/2 Tbls. apple cider vingar
1 tsp. sugar
1 tsp.salt
1/4 tsp. pepper
1/2 cup celery
1/2 cup mayo
2 Tbls. parsley
Cook potatoes with skins on, while they warm peel and cut into 1/8" cubes, add grated onions, poor oil and vingar and sugar into a bowl with salt & pepper, add warm potatoes. Mix with two forks and try not to break up potatoes, cover and chill for 1 1/2 hours. Then add celery,blend with mayo and add 2Tbls. parsley.

Is that a quarter pound of taters or the taters need to be about a quarter pound a piece. If it is the size of the taters, how pounds of taters do you need?

Never tried the veg oil in potato salad, Ill have to try that.

1/4 lbs of potatoes has to be wrong. Maybe 2-3 lbs with that recipe?

You might have to add about another 1/4 cup mayo for the extra potatoes, I would taste it once it comes out of the frig to see if you need to add more salt & pepper. Sorry about the 1/4 potatoes, I had got some bad news while I was writing this recipe a close friend of mine of 20 yrs. passed away this past Sunday and my mind was woundering. Larry

You ain’t from tater country are ya now. Wink Seed taters went in the ground up north of here at the beginning of the month. New taters will be ready about the end of June mid July and will be nice and tender and about the size of a golf ball or just a little bigger.

The only sweet potato salad I've tried is German potato salad. Do you have an approximate recipe for the cold potato salad that is sweet? I've never tried it.
