Tonight, I made these little bundles of awesome. Bacon wrapped chicken thighs, stuffed with cheese and ham. I don't know if this has a more common name, but my wife thought that "Bacon Wrapped Meat stuffed with Meat" didn't really have a nice ring to it...so "Bacon triads" it is!
This is too much ham, next time I'll halve that.
All wrapped up and ready for the Traeger:
See you in 2 hours!
The smell was fantastic
The cheese held its shape nicely
Asparagus for "balance"
They tasted fantastic!! The kids ate them too! The leftover smell terrific, and I have been instructed to bring leftovers to work tomorrow.

Looks great. It is kinda of a chicken cordon bleu, - breading +bacon. Maybe you should call them love pockets, cause I'd sure love to have me some. _________________ 22.5 Weber Kettle

Looks Great!!! Not trying to one up you, but I have done very similar.
Boneless thighs stuffed with ham and pepper jack cheese and wrapped them up in bacon. I thought of them as "Cordon BBQ"
Bacon Triad, very nice.

Hey Mark - How did you find the consistency of the Jack cheese? Did it stay in the pocket OK, or run out? I was considering trying these with brie and cranberry, or maybe some spinach inside.

Some ran out, but I think it's a matter of how well you wrap them. I can see you put a lot of time and love into wrapping those. They look great.

I used St. Albert's cheese curds, because I really wanted the cheese to retain its original shape, for the most part...I had no idea how that bacon wrap was going to hold up, but I was quite amazed after finally taking a look, after 90 minutes! _________________ --
