I cooked up some thigs sat

Had them in the WSM for 3 hours at 200-225

Also put them in a pan. They never got above

160. I grilled them up to finish them at 300-400 degs

Wanted to get them to 180 in the WSM

I put the probe in the fat part of the meat pushed it in about

1/2 way. What are most of you shooting for in temp

They were done on the grill with inderect heat

and had a good tast an all but think I should have got the

temp higher in the smoker. I marinated them in Paul Newmans

own olive oil and vinager. USed my own rub

THe pan had a lot of oil in it after 3 hours I poured it off.

Think I should have poured it off sooner

It was bone in skin on

I like to cook chicken at 275 - 300*.

The 200 - 225 just doesn't work well for me!
