Ok, I came up with this recipe the other day and was quite happy with it as were the guests I had over for brunch Sunday morning. Anyway, I thought that I would share it. I didn't really measure anything out, just did it to taste. But here is the recipe .

Hope some of you try it and let me know.

Ingredients


3 cups pulled bbq pork
cup corn kernels removed from cob (mine were smoked)
3 tbls garlic
1 tbls parsley
1 medium Vidalia or red onion (chopped)
1 tbls olive oil
1 tbls sesame oil
Salt and pepper to taste


Place pork in food processor pulse till roughly chopped. Add corn, parsley, onion salt and pepper. Pulse until all ingredients are incorporated. Slowly add oil until mixture mixes freely but not wet.

Process until meat resembles a thick paste.

Wrap in plastic wrap, roll tight. Chill overnight, serve w/ crackers or dry toast.

That sounds really good...I'll have to give that a try! Thanks...

I'd almost be tempted to wrap it up in some masa harina, add a little kick with some hot stuff, and make it into a tamale filling...

That sounds like a good idea. I had it with some pita bread today..It was tasty. I could eat it by the spoonful Very Happy
