That is beautiful. I've always thought briskett is a crap cut.....I buy choice (probably a couple of hundred to this point) and I always say....buy shoe leather and turn it in to prime beef. Well you just screwed me....now i'm going to have to pay prime rib price for frickin briskett and cook one of these. Man thast sucks!

Good questions.

Taste - Awesome, simply awesome. Very moist and that great beefy flavor we like in our briskets. Also pretty rich, I could only eat three slices (trust me I wanted to eat more). Cut with a fork and when you picked up a piece you could easily tear it apart.

Worth the Price? - I've done some pretty good CAB packers at $1.99 lb vs. the $4.99 a lb I paid for this one so it's hard to say. I'll say yes for no other reason than I was able to experience what all the hype is about and it tasted great. However, I don't see myself doing another one unless it's for a very special occasion or if I'm really trying to impress someone.

very nice, you must be from the fresno/clovis area, I recognize that sticker and was just there. I am starting out with the cheaper version. so where do you get the packers for $1.99?

Yep, I'm in NW Fresno. You can get CAB from the Meat Market from time to time on-sale for $1.99 lb. Regular price is $2.99. If the Meat Market doesn't have them I'll get choice packers at Smart and Final. Smart and Final's prices range from $1.89 a lb - $2.29 a lb. Dig through their inventory as you can usually find a choice brisket or two mixed in with their selects.

If you bought a 22" WSM from a guy named Ed in Chowchilla you indeed bought it from my good friend and BBQ Buddy Ed. Ed's a great guy. He picked-up a Stump's Baby shortly after he sold his WSM.

I forgot about this post. Mentioned to Ed you said hello and he was glad to hear your putting the 22" WSM to good use. Both Ed and cut our real Q teeth on WSM's, I still have my 18" but I've got to admit she doesn't get much use these days unless I'm doing a big cook, most of my cooks are done on my ceramic.

Speaking of Ed I'm going to his place for a Q this weekend. I'll be doing burnt ends out of the point from this Wagyu brisket, a fattie, road-side chicken and whipped up some Sweet and Spicy Chipotle slaw just in case there's a sidewinder challenge thrown in there, lol.

Larry, sounds like an awesome weekend. BTW that Brisket tooks amazing. I bet them burnt ends are gonna just melt.
