Looking very good! Best of luck man, I have a huge cook tomorrow, 20 butts, 24 racks of spares, 75 lbs of sausage!!!! I would love to see pics during your cook, and your finished product of course!

Thanks All! I hope your fourth was great!!

Felt good to finally shower and hit the rack up for 34 hours...but had a blast!


After arriving to camp we unloaded the cooker and unhitched the trailer.


Arranged stuff in the trailer for easy access.


Posted the flag!


Fired up a chimney to get dinner going..three briskets (one on lower grate).


Made two rings out of foil for the cabbage to sit on.




Giving pig a bath with water and vinegar...got to get the ears and snout clean.


Removing any glands (add bitter taste to meat) and just generally cleaning up the pig.


A block of hickory in his mouth.


Tied up to keep his legs in place until time to add the pig to the grill. Also a bag of ice in the cavity.


Iced and tied up until needed.


When I went to go pick up the pig my buddy took a shovel and leveled the cooker. He didn't have a level so he used a ball he had in his car. With the ball on top of the cooker when it would not roll side to side or front to back he was satisfied. Improvise, adapt, overcome.


Leveled my DO table too.


Got to have a trash can.


Kettle, and WSM, I used the grill that was there to fire of my chimneys.

My buddy made an ice run and stopped by Wal-Mart and bought a BB gun.....what a blast shooting tin cans off the horseshoe pits, plastic bottles and smack talking.

Cabbage.


Corn done.


The cooker was the buffet line as I hadn't fired it up yet!


Brisket and taters...yum!


Sunday morning starting the mountain man breakfast and coffee.


Underway.


Twin chimneys going. Had chimneys going all the time...always feeding something, the WSM, the pig cooker, the DO table.


Breakfast done.


Seven butts done.


Pig getting there.


Pig done! Those rough looking spots on the pig is from the kosher salt I used rubbing down the pig. The pig was done early so I throttled back on the heat, then let her rest, then pulled it. Everyone seemed happy and folks were going back for more.

I think I smoked a dozen cigars that was fun in itself!

Sorry there are no cut up or plated pics as I was going over 24 hours no sleep at this point was just getting it done. We had a blast!

What do you attribute the early time for the pig being done to?

30+ hours without sleep? Shocked

I've fed 1,200 peeps the next day and not gone near that long without some rest...........................

Wow man! That was some 2 day feast! I don't know how you kept the lookies away from your camp. That smell must have drifted for miles! I can see people taken under your spell now....

HELL yeah Dan!!!! That pig looks beautiful and eveything else looks spot on as well. The only bad thing I saw througout the cook was all the Deadskins stuff!!! LOL.... Laughing Laughing Laughing Awesome job, now get some rest!

Mike, Wow 1200 you are DA-Man! I called after being up for 24 hours so if I sounded garbled....I was thinking perhaps the drip pan had something to do with radiant heat or somthing..just scrtaching my head. The drip pan was roughly 2-3 inches from the grate. The temps at first were 300 for the first hour but after that it settled to 225-250. Don't know. Since I never had cooked on this cooker I wanted to stay up and watch it to ensure nothing stupid happened. Crazy I know.
