Yesterday was our 4th annual Caveman BBQ. It started out with downpours and flood warnings, but the skies parted in time for dinner, ending up to be a pretty awesome day! I have a small offset, and as such can't really do to many of one thing at any time. So, with 40+ people coming, I had 30 racks of ribs to smoke. This meant prep started Wednesday night, and smoking began in batches on Friday morning. I like just dry rub on my ribs, no sauce. I know I don't do the 2-1-1 method, but the ribs came out pretty damn fantastic if I do say so myself. Unfortunately, i don't have any pics of the actual ribs. They went quick, and I was "imbibing" by then. Without further ado, my photo (what little I have) oddessy...

Wednesday night I headed to Sams club. Came home with two cases of Pork Baby Back ribs. Here's the first case getting ready to get the membranes pulled off.



After the rub was applied, I put them into vacuum sealed bags. God I love this foodsaver!



And into the fridge they went, just for two nights!



Friday morning they came out to rest, while I got the smoker fired up.

At this point, I did 3 sessions on Friday, smoking 6 racks at a time. When they were done, I vacuum sealed them again, and placed them back in the fridge. Saturday morning, I got up and did another session of ribs to start the day. By 11:30, it was time for some ABT's!



Came out fantastic, and didn't last long (like I need to tell you guys that)!



Now, not only did I make all the ribs, but my wife and I also made all the beer for the event too! We had 25 gallons total, 3 cornie kegs of our Pale Ale, a cornie of our ESB, and a cornie of our Hefewiezen. All kicked by the end of the night!!



I even got T-shirts made up to mark the occasion!



Dinner consisted of 30 racks of ribs, 4 bags of salt potatoes, and 45 ears of corn! Quite a spread!

Now, at this point, I'm out of pictures. I took some video, but it didn't come out correctly. However, here is the real reason why everyone comes together to enjoy the party!

The Rules of Caveman BBQ!

1. There is NO talking! Only pointing and grunting is allowed!
2. There are NO utensils! Fingers only! Keep this in mind if you bring a dish to pass!
3. If you are caught talking, something WILL be thrown at you! As such, if you're a gabber, bring crappy clothes to wear for dinner!

And that's it! Regardless of whether you talk or not, it usually ends up in a large food fight. I've picked rib bones off the roof before. Someone introduced a watermelon one year, and that always makes an appearance now. It gets smashed on the ground, and then ends up on someones head as a helmet. In all it was a great time! Sounds like fun.

P.O.S...... Pastrami on Stick should play well at a Caveman Party. At a Caveman Party there wouldn't have been as many leftovers.

salt potatoes are baby white potatoes that you boil in salt water. the salt crystalizes around the skin of the potatoe. slice it in half and put some butter on it. awesome.

+1 on the salt potatoes. They used to be a New England thing, but word's gotten out about how good they are.

About the cook...all I can say is DAYUM!
