It started out as a beautiful day,so I built myself a fattie.I used plain ground pork which I seasoned with some of my Georgia Cajun Sausage Seasoning.Rolled it out and layed some pounded out chicken breast on it.I sautéed up some hot banana peppers and a couple of maule peppers right out of the garden with some cremini mushrooms, let them cool then spread on top of the chicken.I rolled this all up and added my bacon weave.Let everything set up in the fridge for a couple hours.

Sun was a blazing so I made myself a refreshing shanty and fired up a cigar.I cooked the fattie in my offset using lump charcoal and some apple and cherry for a light smoke.I cooked it at about 250-275 for about 3 hours,I pulled it at 165-170 internal.Served up with corn on the cob and fresh yellow beans picked from the garden just hours ago. Very Happy I also had some simple brown mushroom gravy..........I like mushroom gravy on anything. Very Happy

At about 2 hours in the sky went dark,the thunder and lightning started,temp dropped a little but the storm only lasted a half hour.















Couple of hours in.


Then the rain came.


Almost there.


Done.


Sliced up.

That fattie is genius! I never thought about using a chicken breast in one. Man that looks delicious!

I've never done a fattie, but after seeing yours, I think any day is a good day for a fattie! This weekend for certain!

Wow buddy it's amazing how a good camera makes anything look good Twisted Evil Laughing Everything looks just so perfect in that fatty, way to go. My meat was done just as it started to pour. There weren't many good things coming out my mouth when i seen it get dark. But....just made it. Talk to ya.
