Cherry or maple, no sauce. I might brush some maple syrup on for a glaze at the end, depending on which rub I used.

I usually use hickory or mesquite on ribs. I used mullberry this past weekend and it was outstanding. Very unique flavor, somewhat like cherry. And used Roxy's mustard sauce as a quick mop the last 15 min.

Wife said 'Best ribs ever!' - she says that every time Laughing

I like a 50/50 combination of peach and pecan on ribs, but I've never met a smoke wood I didn't like. As for a sauce, that all depends on your tastebuds. I'm pretty adventurous, so I really don't have a favorite, I like 'em all. Try Roxy's rib glaze if you get a chance-two thumbs up from this guy.

I tend to use a 50/50 mix apple and hickory, as for sauce I tend to use my Cherry/Chipotle sauce that I cut with a little apple cider and rum. more of a glaze than a sauce for sure.

On a side note I made up my last batch of sauce the other day for an event I was doing at my day job and replaced my honey with Agave nectar.. WOW what a difference that made. I would highly recomend trying it it adds an enitrely new layer of flavor.
